The world’s Love affair with Chilis and people who love the burn of spicy food — tend to have a penchant for sensation-seeking. Think rollercoasters and adventurous, and remember, it’s not all about the burn.

You’ll find that chili-heads confess to an almost addicting quality to eating hot sauce. It’s a passion. And the number of people in the around the globe who share this passion seems to be growing.

If we take a look at what is fueling our taste for fire, it seems that big demographic shifts have been the driver here. As Hispanic and Asian populations grow and migrate, so too does the influence of their culinary traditions.

I would say it’s because heat is so much a part of cuisines from around the world, and although we respect the integrity of those cuisines, we also seek out the kinds of heat that they bring to them.

It seems as though not some, but most, like it hot. As nations, our tastes are changing. The growing number of immigrants and morphing demographics of our melting-pot cities are causing a desire for spicy, ethnic foods. The craze for chilis is such that it has even entered, the mainstream world of ice cream. With some niche stores including new ghost pepper ice cream, together with Scorpion Sting ice cream, with three ghost pepper hot sauces added to their menus. And yes, customers will have to sign a waiver before eating it.

For the past decade, the hot sauce manufacturing industry has grown at a rate of 9.3 percent per year. There are actual reasons for hot sauce growth, though. The explosion of hot sauce sales can be traced to demographic shifts, immigration and the growing popularity of spicier ethnic food in the United States, Canada and Japan.

The benefits of chili are numerous and this wonderful  Sriracha infographic proves just that, some of the statistics are quite compelling; “Demand from supermarkets and grocery stores has reflected the change in consumer taste, and food retailers are dedicating more shelf space to ethnic cuisines,” the report said. “Ethnic supermarkets —also growing rapidly — more prominently offer a variety of hot sauces than more traditional sauces.”

 Ultimately this love story that  most of us share with chilis and hot sauce, if nothing else knows how to bring the heat to our adventurous palate.
